Diabetic Candied Yams Recipe

Made with water, margarine, nutmeg, yams or sweet potatoes, sugar substitute, vanilla extract 

time: 30-60 minutes

Ingredients

  • 3 medium yams or sweet potatoes, peeled and sliced into rounds
  • 10 packets sugar substitute
  • 1 tablespoon vanilla extract
  • 1 teaspoon nutmeg
  • 1/4 cup margarine
  • 1/2 cup water

Directions

Place potato rounds in large saucepan. Sprinkle with sugar substitute. Add vanilla, nutmeg and water. 

Bring to boil; lower heat and cook, covered, 20-25 minutes or until potatoes are tender and cooking liquid becomes syrupy.
